Breakfast and Brunch

Pancakes
A good vegan pancake makes you wonder why you ever liked pancakes made from dairy and sugar.
• 2 tbsp ground flax seed
• 6 tbsp water
• 1 ½ cups whole wheat flour
• 1/1/2 tsp baking powder
• ¼ tsp ground cinnamon
• ½ tsp kosher salt
• 2 large ripe bananas
• 1 cup almond milk
• 1 tbsp artificial sweetener
• 1 tsp vanilla extract
• 1 tsp virgin coconut oil
To make some, all you need to do is to first make a flax egg. Beat together 2 tablespoons of ground flax seed and 6 tablespoons of water, and then allow the mixture to thicken for about 5 minutes.
In a bowl, mix together 1 ½ cups of whole wheat flour, 1 ½ teaspoons of baking powder, ¼ teaspoon of ground cinnamon and ½ teaspoon of kosher salt. Then, add the flax egg to this mixture.
In another bowl, mash 2 large ripe bananas with the rest of the ingredients. Next, add the mixture from the first bowl and whisk thoroughly. This is now your pancake batter.
Heat some virgin coconut oil on a skillet on medium heat and pour the batter onto it in forming pancakes. Cook until they are golden brown and serve with maple syrup, jam or slices of fresh fruit.
